Oaxaca is Mexico's food capital and the reason cooking retreats are the fastest-growing way to travel alone: a kitchen gives you something to do with your hands and a reason to talk to the person beside you. Expect roughly $250 to $400 a day, and note the altitude, 1,550 metres, which flattens people on day one.

Getting there

Fly into Oaxaca (OAX), usually via Mexico City. The hacienda is 25 minutes from the airport; pickup included.

Worth your free time

  • Mercado 20 de Noviembre. The smoke hall of grilled meats is a rite of passage.
  • Templo de Santo Domingo. Gold-drenched baroque church and the botanical garden behind it.
  • Hierve el Agua. Petrified waterfalls and mountain-edge pools, a day-trip classic.
  • Barrio de Jalatlaco. Muralled cobbled quarter for slow evening walks.

Eat this

  • Mole negro. Thirty-plus ingredients, days of work; you'll make it, then respect it forever.
  • Tlayudas after dark. Oaxaca's giant crisp tortillas, best from street griddles at night.
  • Mezcal, sipped. Espadín to start, tobalá when you're ready; never shot, always kissed.

Why are cooking retreats good for solo travellers?

Because the awkward part of arriving alone is unstructured time with strangers. A class removes it: you are given a task, a partner and a result you eat together. People who dread group dinners often love kitchen weeks.

Should I avoid Guelaguetza?

Not avoid, but plan. The late-July festival is spectacular and fills the city solid; prices spike and rooms vanish. Our dates work around it deliberately.

Is the altitude an issue?

Oaxaca sits at 1,550 metres. Most people feel it as mild breathlessness and poor sleep on night one. Drink more water than feels necessary and take day one slowly.
